To hide rows in Excel with a plus sign, you need to use grouping. Grouping allows you to collapse rows and display a plus (+) or minus (−) sign to expand or collapse the grouped rows.
Steps to Hide Rows Using Grouping

Select the Rows to Hide
Click and drag on the row numbers along the left side of the sheet to select the rows you want to hide. -
Open the Group Option

On Windows, go to the Data tab → click Group → choose Rows.

On Mac, go to the Data menu → select Group and Outline → choose Group.

Collapse the Group
After grouping, a minus (−) sign appears at the left of the grouped rows. Clicking the minus sign hides the rows. -
Expand the Group
The plus (+) sign replaces the minus sign after collapsing. Click the plus sign to display the hidden rows again.
Additional Notes

You can group multiple sections in the same sheet. Excel will show nested plus and minus signs if groups are within groups.

To ungroup, select the grouped rows → go to Data → Ungroup (Windows) or Data → Ungroup (Mac).

Use Outline symbols: Go to Data → Outline → Show Outline Symbols to always see the plus/minus signs.
